Iodine Value

IODINE VALUE, of an oil or fat, is the percentage of iodine it absorbs when dissolved in chloroform or carbon tetra chloride and treated with iodine chloride. This furnishes one of the most important methods of identifying an oil or fat; it gives a measure of the unsaturated fatty acids (q.v.) present, which gives a basis for the classification of oils, fats and waxes (q.v.).
